Pueblo, CO visit

Chris and I had a whirlwind trip to Pueblo this weekend. But we had a really nice time and much needed, stress releasing break.
For dinner Thursday night we headed to Rio Bistro. We were told it was an Italian place, but come to find it is owned by German folks and it is a European cuisine.
Chris had filet mignon and said it was the best beef he has had in a really long time. It was served with perfectly prepared veggies and I tried the zuccini and asparagus...I could have had a whole meal out of them they were SO YUMMY! Chris also let me try his potato ragu that was incredible.
I had a Bistro salad with chicken. I was so full getting to the end of my plate, but didn't want to stop eating. It was made with mixed greens, julienned red peppers, leeks, carrots, and cucumbers, with goat cheese and a fresh raspberry vinagrette. I was totally in heaven! This was THE most AMAZING chicken salad I have ever tasted.
The bread they served us was so fresh with chilled honey butter, incredible! And our server was incredible nice and polite. The ambiance was wonderful, too. I have NOTHING but PRAISE for this little restaurant.
If you are ever in Pueblo you must try Rio Bistro, but take some extra cash, it isn't the most frugal of places to eat, but TOTALLY WORTH IT!!! The owner/bar tender is really nice. We didn't get to meet his wife, I guess she runs the kitchen. But they are only open Tue-Sat 5-8:30 pm so make a reservation!!! They fill up quick.
Pueblo has really done a lot of nice work to improve the downtown area. Recently a Riverwalk, patterned after San Antonio's, has been added. It was really fun for me to see since I served in San Antonio. I felt like I was home.




Lunch on Friday was at Nacho's. The first thing Chris and I thought of was Nacho Libre. We went with a committee that Chris was interviewing with. Pueblo boasts the greatest and most unique chile verde in the country because it is made with Pueblo's own chiles. To be honest, it was really good, as so was the food and atmosphere, but Chris makes a better chile verde. :)



That night for dinner we asked around for a good Chinese place, but no one really knew. So we took a gamble on the closest place. We did take-out because we were both tired and just wanted to swim afterward and see a movie in our room.
The place was hoppin' when I got there so I hoped that would be a good sign. The food was fine, but not up to par with the rest of the food we had eaten. We were hungry and it was decent food so we ate.

Then breakfast Saturday we went to Nana's "B"st Bistro. We sat outside with a cool breeze. I had a bacon, swiss cheese, and artichoke omlet with delicious hashbrowns, oj, and Texas toast. It was really good and fairly inexpensive. The service was great and, since we were there early, it filled up as we finished.


The drive home was so pretty! We took the long and scenic route. Actually, the miles weren't too bad, but through all the canyons and small towns the speed limit was like a roller coaster. But Chris and I had some good quality time together. It was nice.

I didn't get as many photos of our trip as I wanted, but 2/3 of it was driving. I did find some great little shops in Pueblo. One was called the 10-spot. Everything is $10 or less and they have DARLING jewelry. I will certainly go back. And the ladies that own it were so nice. They told me all about Pueblo, the State Fair, and the Chile Festival in the fall.
But with all the fun and relaxation, I was so ANXIOUS and EXCITED to get back home nad see my kids. There are just as funny as I remember. Okay! It was only 3 days, but I missed them like crazy! They keep me busy and entertained. :)
On the way home they were being walruses with pretzels. Those are my kids!!!
